Ingredients

  • 1 lb Prairie Legacy Grass-Fed Ground Beef
  • 8-10 slices bacon
  • 1/2 cup onion - finely diced
  • 1 orange or red bell pepper - finely diced
  • 1 egg
  • 1/4 cup flour
  • 1 tablespoon olive oil
  • 1/3 cup chopped parsley
  • 1 tablespoon paprika
  • 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8-10 toothpicks

Instructions

  • Set oven to 400 F. Heat a non-stick skillet over medium-high heat. Add olive oil and onions to the pan and sauté until caramelized.
  • Add the ground beef and other ingredients to a large bowl then add in onions and mix until combined. Form about 8-10 small meatballs from the meat mixture.
  • Wrap each meatball in 1-2 strips of bacon and secure the top with a toothpick. Place the meatballs an even distance apart on a baking sheet with a wire rack on top.
  • Bake the meatballs in the oven for 15 minutes at 400 F. Turn the oven to broil on high for the last 2-5 minutes of cooking. Keep an eye on them so that they get crispy but not burned.
  • ALTERNATIVELY: Brush bacon-wrapped meatballs in your favorite BBQ sauce and cook for 15 minutes at 400 F.
