Bring the ground beef to room temperature over 30 minutes prior to making the burger patties. Finely mince the shallot.
In a large bowl, combine the beef, shallot, salt and pepper. Use your hands or a meat spatula to mix the ingredients until they are well incorportated.
Preheat an outdoor grill to 500 F. Place each burger on the hot grill. Cook for 3-4 minutes on the first side, then flip and cook for 3-4 minutes on the opposite side for medium-rare burgers. For medium, cook at least 4 minutes on each side.
Assemble the burgers with your favorite toppings. Enjoy!
