Bacon Wrapped Meatballs

Ingredients
- 1 lb Prairie Legacy Grass-Fed Ground Beef
- 8-10 slices bacon
- 1/2 cup onion - finely diced
- 1 orange or red bell pepper - finely diced
- 1 egg
- 1/4 cup flour
- 1 tablespoon olive oil
- 1/3 cup chopped parsley
- 1 tablespoon paprika
- 1 tablespoon fresh thyme
- 1 teaspoon salt
- 1 teaspoon pepper
- 8-10 toothpicks
Instructions
- Set oven to 400 F. Heat a non-stick skillet over medium-high heat. Add olive oil and onions to the pan and sauté until caramelized.
- Add the ground beef and other ingredients to a large bowl then add in onions and mix until combined. Form about 8-10 small meatballs from the meat mixture.
- Wrap each meatball in 1-2 strips of bacon and secure the top with a toothpick. Place the meatballs an even distance apart on a baking sheet with a wire rack on top.
- Bake the meatballs in the oven for 15 minutes at 400 F. Turn the oven to broil on high for the last 2-5 minutes of cooking. Keep an eye on them so that they get crispy but not burned.
- ALTERNATIVELY: Brush bacon-wrapped meatballs in your favorite BBQ sauce and cook for 15 minutes at 400 F.
